Temp in cooler weather

I noticed my engine temp goes wayyy down when the weather is in the 50's
here in michigan.  When it's warmer out, the bike runs great.  But, when it
begins to cool at night in the fall, the temp drops to the low 50's, and the
engine gets cold, to the point where I have to half-choke it in order to be
able to take off from a light.  It will sputter and stall at low RPM.  I
don't think it's the thermostat, because in warmer weather, it always stays
about 1/4 of the way up.
