1st ride - carb and jet issues

Upper 70's, and not a cloud in the sky yesterday in northern VT.  Took the
day off, waded through the labyrinth of our garage and dug Barry (the
custom blue '96) from under a pile of outdoor furniture cushions.  Actually
started fairly quickly (a first for this bike).  Put about 150  miles on
yesterday.  Bike was running rough at the end of last season and, not
surprisingly, the problem didn't miraculously disappear over the long
winter.

The bike has a full V&H SS2R  system, and I *assume* it also has the jet
kit installed (forgot to ask the original owner about this).  Bike idles OK
for the most part (assuming I leave the choke partially on), but the second
I crack the throttle, the bike stumbles and dies.  Turning up the choke
(and the idle) allows for really awkward (and stuttering) stop and go, but
it lets me keep riding.  Once past 3500 rpm, especially with more than 1/2
throttle, things are fine.  As you can imagine, though, hammering the
throttle like this, especially in town, can quickly lead to all sorts of
trouble.

I know this topic's come up before, but I need a refresher.  Was the list's
recommendation to remove the jet kit/go back to stock - then adjust for the
pipe/system?  If the bike sits for more than 2 or 3 days, it acts like a
float bowl has drained - and definitely only running on 2 or 3 cylinders
for several miles.  Stutters badly until *something* seems to break
loose/open up, then kicks in with a vengeance.

Figuring I'll take take it to my local shop for professional help, but
they're backed up about a month.
