Another Track Day tire question?

I not the expert and I'm still trying to learn.

My basic reason for the wider rim is so I can run the Pirelli DC 3 180
tire.  Everyone at NESBA says it is the best tire and they have really good
track side prices.  Problem is they don't make it in a 160.
