carb questions

 OK, so I blasted everything out, checked the hoses, redid a couple and had a hard time getting the filter hooked back up, but it will idle nice.  Problem is, I have to tickle the throttle, or it dies.  Once I get rolling, it is faster than I remember getting up to 50, wow.  I don't like the little knob on the side of the carbs that I believe is for setting the idle speed, but I have it where it will sit and idle ~1100 smoothly.  I don't know where to go next to get the thing so it won't die if I goose it off idle, or even smoothly apply the throttle.
